I would always use CAT6E or 7 for any of these solutions. Also, Atlona makes some nice pieces that I've been using lately. These things are seldom 100% reliable but the Atlona offerings are far more reliable than any other manufacturer I've used in the past.

Also they've added A/V commands for source selections in the Android and iOS apps.
