I have a Beocom 600 with a euro plug. Can I chop it off and fit a UK plug?

Well yes, but that is a mains transformer, not a plug. Probably simpler to get an adaptor.

I already have but it looks like an accident waiting to happen.

I know - my AV2 expander is the same! You could get a two pin mains strip - I use one for my Beolab 5000 system as the units all have two pin plugs and I want to keep them original.

I bought a Pyramid charger in Spain with one of these plugs.
The wire plug twists out of it, and straight into a UK transformer. My dealer charged me about a fiver for the UK one.
